Colour:
Dark brown, bright and shin.

Aroma:
A traditionally characteristic bouquet, complex and well- balanced, penetrating and persistent, but still pleasant acidity.

Flavor:
Sweet, sour, well-balanced and pleasing.
Frank, full-bodied and intense with a long finish.

Food pairing suggestions:
Ideal with Parmigiano Reggiano, strawberries and creamy ice cream. Perfect with roasts and boiled meats. Optimal also as a digestive at the finish of a meal. Used as an exceptional ingredient and very much appreciated by gourmets for its capacity to "balance" the palate's four principles flavor sensations: sweet, salty, sour and bitter.

Note:
Traditional Balsamic Vinegar also has a therapeutic use: a teaspoonful of this 25 year old vinegar, consumed in the morning, is extremely effective in healing gastric ulcers.
