Rice with Traditional Balsamic Vinegar of Modena (recipes first courses)
Ingredients for 4 persons: 320 grams of rice for risotto 4 onions 150 grams of butter 150 grams of parmesan cheese chicken broth dry white wine olive oil salt and pepper Traditional Balsiamic Vinegar of Modena
Slice the onions into thin pieces. Melt half of the butter in a large heavy skillet. Add the onions and cook until very soft. Add salt and pepper.
In a casserole dish quickly sautè the rice in the olive oil. Add the white vine. Cook the rice by adding a bit of broth when the rice is still a bit chewy. Remove the casserole from the heat.
Add the remaining butter and the cheese. Mix thoroughly.
Transfer it to individual plates, top with the onions and add a few drops of Traditional Balsamic Vinegar of Modena.
