Lobster with Traditional Balsamic Vinegar of Modena (recipes second courses)
Ingredients for 2 persons: 1 live lobster (about 60 grams) water sea salt 2 shallots 2 tablespoons of butter (20 grams) 2 teaspoons of Traditional Balsamic Vinegar of Modena
Wash the lobster. Fill a medium-sized pot with water and bring it to a lively boil. Add sea salt, and slide in the lobster head first. Leave the lobster to boil 25 minutes. Remove it from the pot.
Divide it half lengthwise, extract all of the meat, and cut it into pieces. Clean and dice the shallots and brown them in butter.
Remove the meat from the claws and mix with the browned shallots. Stuff the shell with this mix-ture and cover with cut meat.
Add several drops of Traditional Balsamic Vinegar of Modena and ....... Buon Appetito!
