Traditional Balsamic Vinegar of Modena: the quality
The Traditional Balsamic Vinegar of Modena can be classified by the institute of quality the “Ente di Certificazione e dalla Commissione di Assaggiatori esperti” according to levels of quality:
- Affinato: 12-year aged vinegar - Extravecchio: 25-year aged vinegar (gold capsule)
On the bottle it is not possible to report any kind of information about the year of production or the ageing period of the product, as it has been stated by the Italian organism, the Disciplinare, but it is possible to report “Extravecchio” on the label for the vinegar that is 25 years old at least.
The Traditional Balsamic Vinegar of Modena is dark brown in colour with a thick syrupy like consistency, and it has a penetrating bouquet fragrance with evident but agreeable and balanced acidity.
The Traditional Balsamic Vinegar of Modena has a delicate fragrance balanced between sweet and sour.
The Traditional Balsamic Vinegar is sold in special glass bottles only according to rules of the Italian organism the Disciplinare di Produzione. Bottles must have the capacity of 100 ml and the enumerated seal, and they have a spherical shape with a rectangular base.
The Consorzio Tutela Aceto Balsamico Tradizionale di Modena DOP guarantees the quality of the product and the seal wants to assure the correct production procedures: ripening, refining and bottling of the vinegar.
