The PDO (Protected Designation of Origin) mark is applied to those goods for which each and every part of the process of production, including the supplying of raw materials, takes place in a delimited geographical area, of limited dimensions and in which a tight relationship between the local area and the product is maintained according to precise standards.
PDO products, due to their exceptional characteristics, have been officially recognised as Protected Designation of Origin by the European Union.
Traditional Balsamic Vinegar of Modena (ABTM) and Balsamic Vinegar ofi Modena (ABM) enjoy the recognition of the PDO mark; they are in fact produced in the province of Modena and more precisely in the area between the valleys of the rivers Secchia and Reno.
The system of the Protected Designation of Origin and of the Protected Geographical Indication assures a loyal and transparent relationship with consumers guaranteeing the quality and the origin of the products by means of a regime of product tracing and rigorous controls.
Regulation CEE 2081/92 relative to the Protected Designation of Origin and to the Protected Geographical Indication confers judicial protection across all the community territory of its sales denomination including a geographical name. Therefore the regulation determines the criteria which must be respected to benefit from this protection.
Protected Designation of Origin (PDO) intends the name of a region, of a specific place or, in certain cases a place which is used to designate an agricultural or food product:
- originating in that region, or defined by that place or from that place and
-and of which the quality or characteristics are essentially or exclusively the product of the geographical enviroment including all natural and human factors and
-of the which the production, transformation and elaboration take place in the delimited geographic area.
Article 4 of regulation 2081/92 specifies that in able to benefit of a PDO products must conform to certain rules. The rules play an essential role in the procedure because it must allow to check if the conditions for registration have been respected and it represents self-managing quality control which all managers must conform to, to be able to use the denomination.
